Sounds Yummy

THE STRANGEST SPICE | More Intelligent Life: "The best rub for grilled pork or chicken: Put into a dry frying pan: 2 tablespoons each of fennel seeds and black peppercorns; 3 tablespoons of Sichuan peppercorns; ½ a cinnamon stick; 4 star anise. If you’d like to add a few whole cloves or coriander seeds, feel free. Toast them for a few minutes, just until they smell warm and fragrant. Grind them to powder. I use a coffee grinder, but do be sure to clean it before your coffee the next morning. Combine them with ¼ cup each brown sugar and kosher salt. Use liberally; it will keep, sealed in a cupboard, for a few months. [Recipe adapted from Steven Raichlen.]"
